Ferment Academia brings together an international group of fermenters, chefs, educators, researchers, makers and curious cooks to learn through making, tasting, conversation and time together.

Your place includes five nights' accommodation, the complete teaching programme, all meals, producer visits and round-trip group transport from Lisbon.

The full Ferment Academia experience is included with every option. Simply choose how you'd like to stay at Monte da Orada.

Basic — €2,850

Shared accommodation

A shared room for up to four people.
Includes five nights' accommodation, the complete programme, meals, producer visits and group transport from and back to Lisbon.

Standard — €3,350

Twin ensuite room

Share an ensuite twin room at Monte da Orada.
Includes five nights' accommodation, the complete programme, meals, producer visits and group transport from and back to Lisbon.

Premium — €3,850

Single occupancy ensuite

Your own ensuite room for the duration of the residency.
Includes five nights' accommodation, the complete programme, meals, producer visits and group transport from and back to Lisbon.

Shared, twin and single accommodation are available in limited numbers and are subject to availability when you enrol.

What's included

Your place at Ferment Academia includes:

  • Five nights' accommodation at Monte da Orada

  • The complete six-day Ferment Academia programme

  • Two Portuguese producer visits with lunch

  • Dinner beside the sea at a family-run restaurant in Zambujeira do Mar

  • Air travel

  • Accommodation or other arrangements in Lisbon before or after the residency

  • Alcohol purchased at Monte da Orada or the seafood restaurant

You can secure your place with a 30% deposit and pay the remaining balance in two instalments, or pay in full and receive 10% off.

If you pay in full and cancel by December 2026, 50% of the full payment is refundable, in line with the Ferment Academia cancellation policy.

Pay in instalments

30% deposit
Paid when you enrol to secure your place. Your deposit is non-refundable.

30% second payment
Due by 1 December 2026.

40% final payment
Due by 1 April 2027.

Wise bank transfer is our preferred payment method.

After submitting the enrolment form, you'll be taken directly to the payment page where you can complete your deposit or payment in full.

If you'd prefer to pay by credit or debit card, you'll also find information about card payment there. A 3% transaction fee applies to card payments.

Your booking is confirmed once your deposit or payment in full has been received.

Before you enrol

A few useful things to know.

You do not need professional fermentation experience to join us. Previous attendees have included professional fermenters, chefs and food practitioners alongside home fermenters and people following a deep personal interest in food, microbes and traditional knowledge.

The menu during the residency will be predominantly plant-based, with vegetarian breakfasts including eggs and dairy. You'll be able to tell us about dietary requirements when you enrol so the team can confirm what can be accommodated.

The residency begins in Lisbon on the morning of Saturday 29 May 2027. Private group transport leaves Lisbon at 9.00am and travels to Monte da Orada via our first producer visit.

The group returns to Lisbon at approximately 6.00pm on Thursday 3 June 2027.

Ferment Academia is designed as one complete residential experience, so places are offered for the full residency rather than individual days or sessions.
